Yesterday, I discovered something so amazingly deliciously simple! A Peach Pumpkin Apple Cinnamon Oat Dream! All I’m going to say is that this recipe is SOOO yummy, healthy and super easy! I’m in love. Ya gotta try it! I whipped this up to put to use all these apples I bought–which were starting to go south–and I’m sure glad I did … because this one is going in the books! Enjoy!!!

Serves: 3-4 (depending on how hungry you are!)

Preheat the oven to 350 degrees Fahrenheit and line the bottom of a small Pyrex pan with the Peach Pumpkin Pie Organic Sprout Baby Food. I discovered this stuff when I met Tyler Florence at Expo West last year, and it’s awesome. Yes, I know it’s baby food, but it’s perfect for this! Plus, there’s no added sugar, preservatives, artificial flavors or colorings. If you don’t have Sprout, sub with chunky unsweetened apple sauce or an apple sauce banana puree (just mash 1 banana with 3/4 cup unsweetened apple sauce) and voila!

Place chopped apples on top of the puree! Fill to the top (or almost the top! Leave room for the oats).

Top apples with dry old fashioned oats, cinnamon, and brown sugar!

And this is what it looks like! Puree + apples + oats + cinnamon + sugar! All layered! Place in oven and bake at 350 degrees Fahrenheit for approximately 45 minutes to an hour. When done, let sit til cool. Eat or wrap with cling wrap and refrigerate.

The finished delicious masterpiece! Perfect for breakfast (with a little yogurt), a snack or dessert! YUM!
